Random Acts of Wellness with Walgreen's: Get your flu shot

Walgreens.jpgFlu season is upon us, and I am delighted to participate in the Random Acts of Wellness campaign with The Motherhood and Walgreen's.

I know, I know...

You've never gotten the flu shot, and you've never been sick with the flu.

Please don’t fall for common misconceptions about the flu, (you won’t get the flu from the shot), it's a very serious illness, and that's a pretty big gamble to take for something that kills thousands of people each year.

The CDC recommends that everyone 6 months of age an older be vaccinated, but as always, check with your health care provider to make sure it's right for you.

October 1st is the beginning of flu season. Though the best times to get vaccinated are October and November, remember it’s never too late to do it.

Eggland's Best Pink Dozen - A Recipe for the month

EBPinkDozen.gifEggland's Best Eggs continues it's support of National Breast Cancer Awareness Month this month and the Susan G.Komen Foundation with their pink stamped eggs that will be on shelves from mid-September to mid-November and a $50,000 donation to support Komen for the Cure in its promise to save lives and end breast cancer forever.

Eggland's Best eggs are a little different than ordinary eggs:

Eggland’s Best eggs contain ten times more Vitamin E than ordinary eggs, 100 mg of Omega 3, shown to be beneficial to cardiac health, 25% less Saturated Fat, and 200 mcg of Lutein, shown to contribute to eye health. In addition, one Eggland’s Best large white egg contains just 175 mg of Cholesterol compared to 215 mg in an ordinary egg.

Anyway, that's all well, and good, but what can you do with them?

We're headed into the holiday season (it'll be here before you know it), and it's one of my favorite times of the year. I jokingly call the time period between Halloween and the Super Bowl, "Brunch and Appetizer Season", since there are so many gatherings that usually involve one or the other.

One of my favorite things to make is a Breakfast Sausage Casserole on Christmas morning, and I'll look forward to using Eggland's Best eggs for it. I think there are several versions of it, but this is how I make it (I never said it was health food, either, but it's really, really good!)

Breakfast Sausage Casserole

2 pounds bulk sausage
10 slices bread (crusts removed)
Butter
2-3 cups grated cheddar cheese
8 Eggland's Best eggs
1 quart half and half
2 teaspoons dry mustard

Grease a 9x13 casserole dish

Brown and drain sausage

Spread butter evenly on 8 slices of bread (Texas Toast works well, too) and layer in pan (I cube the bread first).

Add a layer of sausage, and evenly spread cheese over that.

Combine milk, Eggland's Best eggs, mustard and salt.

Pour milk mixture over top of bread, sausage and cheese and allow to stand overnight in the refrigerator.

The following day, bake at 350°F for 1 hour.

Cut into squares to serve.

Food Network Chef Claire Robinson and Eggland's Best Eggs

EBPinkDozen.gifIn honor of National Breast Cancer Awareness Month, Eggland's Best Eggs continues it's support of the Susan G. Komen for the Cure, and they're celebrating with Pink Ribbon eggs.

Claire Robinson, Food Network chef and host from 5 Ingredient Fix teamed up with Eggland's Best to share the news about the Pink Ribbon eggs, and she's created an awesome looking Baked Egg Casserole that may be giving my traditional Sausage-Egg Casserole a run for the money.

I seem to be stuck on egg casseroles for recipe ideas, but there's so much more you can do with them.

The holidays are coming up, and I call it "Appetizer Season", and it may be because I'm from the south, but there's nothing like a good deviled egg, and there's a recipe for Coaches Deviled Eggs on the Eggland's Best site that looks delicious.

Don't forget, you can find out more about how Eggland's Best Eggs are a good source of vitamins, and how contain 25 percent less saturated fat and 19 percent less cholesterol than regular eggs at their website.

If you're not familiar with them, do give Eggland's Best a try. We've really noticed a difference from our regular eggs, and I'll be glad to come to your house and eat whatever you make for me to see if they make a difference in your cooking, too, because I'm selfless like that.
